Bringing Home the Bacon
Join our pig farming friend Tyler Charles De Francisco as he walks participants through the steps of how to literally bring home the bacon! In this make-and-take introduction to basic meat curing, Tyler will offer a lecture discussing basic curing methods and dry hanging techniques, followed by a hands-on student experience weighing, mixing, and applying cure to pork belly to make your own bacon.
Students will be provided everything they need for the class, including gloves, curing bag, 2 pounds of red wattle pork belly, curing salts, and an array of aromatics to find the just the right spice profile to make your bacon dreams come true!
The class will be held indoors at a large warehouse space in Asheville, NC on Sunday, November 7, 2021 from 1-4pm.

Class is limited to 20 participants, so please sign up early. Participants must be age 17 or older.
About the Instructor
Tyler Charles De Francisco is a first generation farmer raising red wattle hogs in Big Sandy Mush, NC. Focusing on small batches of pigs with high quality, Tyler’s heritage breed pigs are given ample time and space to reach their full potential. Tyler is a popular teacher at our annual Firefly Gathering event.
